Growing up in Southern California means I take Taco Tuesday very seriously so, today I am sharing a fun and easy taco bar that will help make your weeknight dinner fiesta worthy. The taco bar is a great way to please many picky palettes because everyone can load up their tortillas (or bowl if you are limiting calories) with the flavors of their choice.
Chicken, Steak, Bell Peppers and Onions
Other Ideas – Pulled Pork, Blackened Tilapia, Black Beans
Red Onion, Cilantro, Guacamole
Other Ideas – Pickled Jalapeño, Cabbage, Tomato, Corn
Chipotle Sour Cream, Mango Peach Salsa, Cilantro Lime Sauce
Other Ideas – Mole, Queso, Salsa Roja
Corn and Flour tortillas
Grill the chicken and slice into strips.
Saute bell peppers and onions until softened.
Grill the marinated flank steak and cut into cubes.
Dice red onion and cilantro.
Mix 1/2 cup mayo with 2-3 minced chipotle peppers.
Put all other salsas and sauces in small serving bowls.
Warm the tortillas over an open flame.
Set everything out for the feast to begin!
Don’t forget your margaritas! I make a mocktail by muddling fresh pineapple chunks with a splash of jalapeño juice, then I shake with margarita mix and ice. I strain into a highball glass and top with a pineapple La Croix. It is so delicious and perfect for a nursing momma!
